Eat a Treat
I have a wicked sweet tooth. Sometimes, I try to combat this with treats that seem decadent but are actually healthy. And then I eat them for dinner. Or breakfast. Whatevs.
This one arose out of necessity. I had 2 almost-over-ripe nectarines. Not enough to make jam, too many to let go to waste (I’m sure the chickens would have loved that outcome!) All the recent dessert-in-a-jar recipes inspired the presentation.
It’s so easy, I trust no one needs a recipe. Dice a nectarine (a peach would also be yum), layer it in a pint jar with plain yogurt (I like Nancy’s), a splash of real maple syrup, and a crumbled ginger cookie.

GF’ers! I used a Pamela’s spicy ginger cookie with real crystallized ginger and it was incredible.
